Loaded Green Shakshuka

This Loaded Green Shakshuka, is a take on the classic Mideastern Dish normally made with a tomato sauce using paprika, nutmeg, and cayenne. The word Shakshuka roughly means “shaken” or “mixed up”. This affordable, filling, and no frills dish is perfect for your week day brunch menu.

The beauty about a loaded green shakshuka is that you barely need a recipe! When I have zero idea what to make for breakfast or brunch this is one of my go to’s. Find what you have in the fridge and pantry, grab some spices, throw it in a skillet, add some eggs and you’re done! Don’t eat eggs? No problem, substitute the eggs for tofu! The ingredients and possibilities are endless!

There is something comforting about a one pot, no frills dish that warms the heart and brings us together. My favorite thing about Shakshuka is that the possibilities are endless and you can make it your own, there are no rules. especially in cooking!

Eat your greens and feel full with this Loaded Green Shakshuka Recipe.


  • 1 Zuchini, shredded
  • 12 Cups Spinach
  • 1/2 Onion, Chopped
  • 3 Eggs
  • 1/4 tsp Cumin
  • Cilantro
  • Avocado
  • Slat and Pepper to taste


  1. Shred Zucchini into small pieces and squeeze out the juice with a paper towel or cheese cloth
  2. Lightly sauté chopped Onions, shredded Zucchini, Cumin, Salt and Pepper
  3. Fold in Spinach
  4. Before Spinach has shrunk down, create wells for eggs and drop them in.
  5. Cover with a lit and let sit 5 min.
  6. Spinach should have shrunk and eggs should be done
  7. Serve with Slices Avocado, Cilantro and Bread
