I have been craving something sweet all month and I am making these ASAP! The best thing about these Fruit Bars with a Cinnamon Streusel Topping is that you can use any fruit that is in season! They are simple to make and are gone within the day.

I once had someone say to me that these bars were literal heaven and that they could not stop eating them! These Fruit Bars are so good that you can eat them for breakfast or dessert, topped with ice cream of course!

Fruit Bars with a Cinnamon Streusel Topping

Description

The best fruit bars I have ever made!


Ingredients

Scale
  • 2 Cups Flour
  • 1 1/4 Cup Quick Rolled Oats
  • 3/4 Cup Brown Sugar
  • 2 tsp Cinnamon
  • 1 Cup Butter, Cold

Filling

  • 2 Eggs
  • 1 Cup Sugar
  • 2 Tbsp Flour
  • 1/4 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 Cups Peeled and Chopped Fruit
  • 3/4 Cup Cinnamon

Instructions

  1. Preheat oven to 350 degrees and grease a 3 quart baking dish, set aside
  2. In a large bowl mix the 2 Cups Flour, Oats, Brown Sugar, and Cinnamon
  3. Cut in the cold butter into the Flour mix until small pea size balls form
  4. Set aside 1 1/2 Cups of the mixture
  5. Press the remaining mixture into your grease baking dish and bake 15 min
  6. Make the Filling
  7. Whisk the Eggs and Sugar until smooth.
  8. Add into the egg mixture the 2 Tbsp Flour, Baking Powder, Salt and Cinnamon
  9. Stir the fruit into the Egg Mixture
  10. When bottom crust is done pour fruit mix on top of the bottom crust while hot
  11. Crumble the remaining 1 1/2 Cups of the Oat mix on top of the fruit
  12. Bake again for 30- 40 min until the crust is golden and the fruit is bubbling
  13. Let sit for at least 10 min before cutting
  14. Serve topped with ice cream or powdered sugar and milk drizzle
