Easy Peanut Butter Cookies

This Peanut Butter Cookie is a recipe that everyone should have under their belt. You can whip this up in one bowl to reduce your mess and have delicious cookies faster! With its comforting Peanut Butter nodes and the sprinkle of sugar on top, this cookie is the best comfort snack!

The greatest thing about these cookies is that they are warm and soft on the inside but have a crunchy outer rim. It gives the cookie some substance. You can make this cookie Vegan and Gluten free. See my substitutions below.

To make these cookies Vegan you can substitute the 1 Egg for Ground Flax Seed, Ground Chia Seeds, or Applesauce. To make it Gluten Free use Gluten Free Flour with 2 Tbsp Baking Powder per Cup of Flour.

Easy Peanut Butter Cookies

  • 1 1/4 Cup Flour
  • 1/2 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Butter, Soft
  • 1/2 Cup Creamy Peanut Butter
  • 1 Egg
  • 1 tsp Vanilla Extract


  1. Preheat your oven to 350 degrees, prepare baking sheets with parchment paper and set aside
  2. In Medium bowl whisk Flour, Baking Powder, Baking Soda, and Salt. Set aside
  3. In mixer Beat Brown Sugar, Sugar, and Butter until Smooth, 3-5 min
  4. Beat in Egg
  5. Beat in Peanut Butter and Vanilla Extract
  6. Slowly mix in Flour until just incorporated
  7. Scoop out cookie balls about 1″ and place on cookie sheet
  8. Bake for 9-12 min or until sides of cookie are just turning golden
  9. let sit on sheet for at least 3 minutes before eating!



Eat them right off the sheet or save some for later and make Cookie Sandwiches!
