I had a ridiculous amount of Plums the other day so I have been wanting to break in my new Williams Sonoma Tart pan so I thought, Why not?! The one I have is linked HERE

This will be perfect for spring and you can switch out the fruit for Apples, Peached, Pears. It would work great with all!

Un baked Plum Tart

My favorite way to assemble the tart is to mix the filling and fruit together in one bowl and then take the time to lay the slices out to make a beautiful visual presentation.

Your fingers will get a little sticky but the end result is well worth is and a true show stopper!

Make sure to dust the whole thing with the Turbine Sugar!

Country Plum Tart with Cinnamon Sugar Dusting

  • 1/4 Cup Granulated Sugar
  • 4 tsp Flour
  • 1/4 tsp Cinnamon
  • 34 Cups Plums (or Peaches, Apples) Sliced and Pitted
  • 1 Tbsp Lemon Juice
  • milk
  • Turbino Sugar


  • 1 1/2 Cup Flour
  • 1/4 tsp Salt
  • 1/3 Cup Butter
  • 45 Tbsp Cold Water


Pastry Dough

  1. Whisk Flour and Sugar together. 
  2. Cut in Butter until peas size balls form
  3. Stir in water and form dough into a disk
  4. Cover with plastic wrap, place in fridge for at least 1 hr


  1. On a floured surface roll out dough to the desired size of your tart pan
  2. Oil your tart pan and place dough into pan and press into the sides
  3. Refrigerate till filling is made
  4. Preheat oven to 375 degrees
  5. Slice your fruit into 1/4 ” or 1/2 ” slices(depends on how thick you like your fruit)
  6. Pour into a bowl with Flour, Sugar, and Cinnamon. Stir to coat the fruit
  7. Drizzle with Lemon Juice and stir again
  8. Either dump or lay your fruit out in your tart dough (I laid mine in a circular pattern, your hand swill get messy)
  9. Brush crust with Milk and sprinkle the whole tart with SUgar
  10. Place tart pan onto baking sheet and bake for 34-40 min, until crust is golden and the filling is bubbly
  11. let cool 10-15 min 
  12. Cut and serve with ice cream
