Cilantro Lime Chicken with a Mango Salsa

Are you ready for a super easy crowd pleaser?! This Cilantro Lime Chicken can be made 1 hr before dinner or marinaded overnight. Perfect for nights when you have no idea what to make.

The sophisticated flavors of lime and cilantro take this chicken dish up a notch! My preferred preference is to grill the chicken but you can pan fry or even bake it and achieve the same results!

Cilantro Lime Chicken with a Mango Salsa

  • 3 Chicken Breast Cut in half, length Wise

Chicken Marinade

  • 1/4 Cup Cilantro
  • 1/3 Cup Lime Juice
  • 2 Tbsp Lime Zest
  • 1 tsp Chili Powder
  •  1 tsp Red pepper Flakes
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Pepper
  • 3 Cloves of Garlic
  • 3 Tbsp Olive Oil

Mango Salsa

  • 1 Mango, sliced and cubed
  • 1/2 Cup Red Onion
  • 1/2 Red Bell Pepper, Chopped
  • 1/2 Avocado, Cubed
  • 1/2 a lime Juiced
  • Sprinkle of Cilantro
  • pinch of Salt and Pepper
  • 1/2 Cup Corn


  1. Slice Chicken Length wise to create 6 Portions
  2. Combine the Cilantro, Lime Juice, Lime Zest, Olive Oil, Garlic, Chili Powder, Cumin, Salt and Pepper into a bag
  3. Place your Chicken into the bag or marinade, seal it and let it sit in the fridge for 1-2 hrs or best yet, overnight
  4. When ready to start grilling the chicken make the Salsa
  5. Combine the Mango, Red Onion, Bell Pepper, Avocado, Lime Juice, Cilantro, Salt, Pepper, and Corn into a bowl and toss together
  6. When chicken is done top with Mango Salsa and Enjoy


Best served with Cilantro Lime Rice
