This Blackberry Lemon Buckle is packed with light fruit flavor and will fill you up for your day. For me anything with lemon is a good pairing but the blackberry is exceptionally good.
You may be thinking, what is a buckle? A buckle is very similar to a coffee cake. The reason for its name is that when you sprinkle on the crumble topping and a small amount of fruit the cake buckles under the weight. Ta da! A buckle!
This Blackberry Lemon Buckle is great fro brunch or meal prep for a morning breakfast. You most definitely can switch out the blackberries for raspberries, blueberries, or strawberries. Any fruit will work and the lemon juice pairs wonderfully with all fruit.
To top of this delicious Buckle bread recipe adda glaze! For this bread I mixed in some Blackberry jam into my standard glaze and it was perfect. Think about adding a glaze to this bread, fin to it will still be divine!

Blackberry Lemon Buckle

Ingredients
- 2 Cups Flour
- 1/2 Cup Sugar
- 2 tsp Baking Powder
- 1/4 tsp Salt
- 1 tsp Lemon Zest
- 1 Egg
- 3/4 Cup Milk
- 1–2 Tbsp Lemon Juice
- 1/4 Cup Butter, melted
- 2 Cups Berries
Crumble
- 1/2 Cup Sugar
- 1/3 Cup Flour
- 1/2 tsp Cinnamon
- 1/4 Cup Butter, cold
Instructions
- Preheat oven to 375 degrees, and prepare 8×8 Being pan with parchment paper or baking spray
- In large bowl combine Flour, Sugar, Baking Powder, Salt, and Lemon Zest
- Stir to combine
- Add Egg, Lemon Juice, Milk, and melted Butter
- Fold in Berries until just combined
- Pour into prepared making pan
- In small bowl mix together Crumble ingredients
- Using hands sprinkle Crumble mix onto Cake in pan
- Bake for 30 -40 min until inserted toothpick comes out clean
- Let sit for 5-10 min before serving
